preparations

for a chilly fall night


1 small onion, diced.
3-4 cloves garlic, minced
1 can of black beans (rinsed & drained)
1 can of white beans (rinsed & drained)
3 cups chicken broth
2 cooked chicken breast, diced
juice of 1 lime
1 tsp-1 TBS ground chipotle pepper (depending on how spicy you like it)
1/4 tsp. ground nutmeg

Saute' onion and garlic in olive oil until tender. Add remaining ingredients and simmer for at least one hour.
top with your favorites. we like cilantro, sour cream, avacado, and black corn chips.

pumpkin + chocolate

{doesn't last long....}



1/2 cup butter
1 1/2 cups white sugar
1 egg
1 1/2 cup canned pumpkin
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 cup semisweet chocolate chips
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the pumpkin and vanilla. Combine the flour, baking powder, baking soda, salt, nutmeg, and cinnamon; gradually mix into the creamed mixture. Stir in the chocolate chips. Drop dough by teaspoonfuls onto the prepared cookie sheets.
3. Bake for 15 minutes in the preheated oven, or until light brown. Cool on wire racks.

eat. at least 5 at a time.
